WEEK DAY DINNERS (week 3)
Cheesy chicken strips
4 deboned chicken breasts, cut into thin strips 1 x packet of mushroom soup powder 400ml milk 1 x tinned creamed corn 1 tbsp brown sugar
Coat the chicken strips in the soup powder and fry in shallow oil until cooked. Add the milk and creamed corn and bring to a boil, reduce the heat and add the brown suger. Mix the rest of the soup powder in a little water and add it to the dish, stirring continually. Simmer for approximately 10 minutes, stirring regularly. Season to taste with salt and pepper. Serves 4 Meatloaf
500g mince 3/4 cup cheddar cheese 1 egg 3/4 cup bread crumbs 1 finely chopped onion 1 teaspoon Worcester Sauce / Fish Sauce Tomato sauce 2 tsp crushed garlic Mix altogether except for tomato sauce and 1/4 of the cheese. Season to taste. Shape into a loaf and place itinto an ovenproof dish. Bake for about 30 minutes at 200deg celsius; pour off the excess oil. Pour a large amount of tomato sauce over the loaf and sprinkle with the rest of the cheese. Bake for a further 20 minutes. Serves 4
