CLAIRE'S CHICKEN Years ago, I worked for a car rental company and I worked with Claire. Every now and again, Claire would bring this delicious dish to work for lunch and I loved it! This is one of my husband's favourite dishes, so of course, I make it at least once a month... 4 Cooked chicken breasts (broken up) 2 tbsp mayonnaise 1 tin of creamed sweetcorn 2 tbsp flour 200ml grated cheese Mix the mayonnaise with the chicken and place it in an ovenproof dish. Mix the flour into the creamed corn and heat it in the microwave for 2 minutes, stir well. Add the corn to the chicken and sprinkle cheese on top. Bake it at 190deg celsius for 30 minutes. Serves 4
MEAT BALLS 500g mince 50ml brown sugar 1 beaten egg 100ml oats Salt and pepper to taste Mix all the above ingredients together, add more oats if necessary. Roll walnut-sized balls and place them in an ovenproof dish and bake for 40 minutes at 180deg celsius.
TUNA AND RICE 2 x 170g tins of tuna, drained 500ml cooked rice 30ml margarine 30ml flour 300ml milk 125ml grated cheese Salt and pepper Paprika Grease a medium sized ovenproof dish with margarine. Melt the margarine in the microwave at full power, add the flour and the milk and mix thoroughly with a whisk until smooth. Microwave sauce for 3 minutes at full power or until sauce thickens, stir regularly. Mix the tuna and rice together and add it to the white sauce. Season with salt and pepper and spoon the mixture into the ovenproof dish. Microwave it at full power for 2 minutes, sprinkle cheese and paprika on top and microwave it for a further 3 minutes. Serves 4
