Meaty meat
When I mention the word "meat", I mostly mean mince (minced Beef, Lamb or Pork), stews and pork bangers. Although I have added other meaty recipes to this site, it is only on very rare occasions, like on Christmas day that we'll eat roasted lamb, beef or pork. Enjoy...
Meatloaf
500g minced meat (Beef or Lamb)
3/4 cup cheddar cheese
1 egg
3/4 cup bread crumbs
1 finely chopped onion
1 teaspoon Worcester Sauce / Fish Sauce
Tomato sauce
2 tsp crushed garlic
Mix altogether except for tomato sauce and 1/4 of the cheese. Season to taste. Shape into a loaf and place it into an ovenproof dish. Bake for about 30 minutes at 200deg celsius; pour off the excess oil. Pour a large amount of tomato sauce over the loaf and sprinkle with the rest of the cheese. Bake for a further 20 minutes. Serves 4
SCOTCH EGGS
4 eggs
8 pork sausages
bread crumbs
oil
Hard boil the eggs. Using 2 sausages per egg, remove sausage meat from the skin and mould the meat around the boiled egg. Roll it in bread crumbs and fry on medium heat in oil until golden brown. Keep turning as sausages burn easily. Serve with mashed potato.
HAMBURGERS
These quick and easy burgers are something that I make when I feel really lazy - usually this is on a Friday.
500g minced meat (Beef or Lamb)
50ml brown sugar
1 beaten egg
100ml oats
Salt and pepper to taste
Mix all the above ingredients together, add more oats if necessary. Form into 5 hamburger patties and fry in shallow oil on medium heat. Or place hamburger patties approximately 100mm from the oven element for approximately 15 minutes.
Serve on a roll with a slice of tomato, lettuce, cheese and bbq sauce.
BBQ SAUCE
1 finely chopped onion
10ml oil
5ml mild curry powder
30ml chutney
30ml tomato sauce
20ml Worcester Sauce
Fry onion in the oil until translucent. Add curry powder and fry for a few more minutes. Add the rest of the ingredients, reduce heat and simmer for 10 minutes.
CHILLI CON CARNE
500g minced meat (Beef or Lamb)
1 x 410g tinned tomato and onion mix
10ml crushed garlic / 2 garlic cloves
10ml brown sugar
1 x 65g tinned tomato paste
3-5ml chilli powder
5ml dried oregano
1x 410g baked beans in tomato sauce
1 green pepper, seeded and cut into strips
Brown meat in a pan, add tomato mix, garlic, sugar and tomato paste and bring to the boil. Add chilli powder and oregano and season to taste. Cover and simmer over low heat for 15 minutes. Add baked beans and cook for a further 20 minutes. Serves 4
MINCE AND RICE DISH
500g minced meat (Beef or Lamb)
1 finely chopped onion
1/2 a packet of thick vegetable soup powder
1 stock cube
80 ml uncooked rice
500ml cheese sauce
400ml boiling water
Brown the meat and onions together. Mix the soup, rice, stock and boiling water together and add to mince. Place it in an ovenproof dish and bake for 1 hour at 180deg Celsius. Pour cheese sauce on top and serve. Serves 4
EASY BEEF STROGANOFF
500g beef stroganoff strips
25ml oil
1 finely chopped onion
200g small button mushrooms
1 x 425g tin of cream of mushroom soup
30ml chopped fresh parsley
Fry the meat until browned in the oil. Add the onion and fry until translucent. Add mushroom and soup and season to taste. Reduce heat and simmer for 15 minutes. Serves 4
SAVOURY POTATO PIE
1 cup mashed potato
2 Tbsp of margarine
1 tsp (5ml) baking powder
3 eggs (2 separately beaten & 1 hard boiled)
1/2 packet of cooked bacon
1/4 cup milk
Cheese
Mix the margarine in with the hot mashed potato and cool. Add the baking powder to one beaten egg. Line an ovenproof dish with the potato and cover it with the bacon, grated cheese and chopped hard boiled egg. Mix the other beaten egg, 1/4 cup milk, salt and pepper together and pour mixture over the potato. Bake for 30 minutes at 180deg Celsius until golden brown. Sprinkle a bit of cheese on top and serve.
