The Frugal Diet




LUNCH OPTIONS

*Choose only one option

  • Crunchy sandwich

    2 Slices whole-wheat bread

    50g Canned sardines in brine

    1 finely chopped tomato

    1 heaped Tbsp low-oil mayonnaise

    Lettuce and cucumber


  • Tuna Salad

    1/2 a tin of tuna in brine

    1 Cup cooked pasta or couscous

    1 finely chopped or grated carrot

    1 finely chopped tomato

    Cucumber, lettuce and celery

    1 heaped Tbsp low-oil mayonnaise or 2 Tbsp olive oil and balsamic vinegar (to taste)


  • Cheese and tomato toast with a twist

    1 slice toasted whole-wheat bread

    34g grated cheddar cheese

    1/3 tinned tomato and onion mix

    1 Green pepper finely chopped

    1 slice finely chopped ham

    Fry the green pepper and add the tomato mix. Season to taste. Pour the mixture over the toast and sprinkle the ham and cheese on top. Place the toast under the grill until the cheese has melted. Serve with salad.


  • Fishy spud

    1/2 a tin of tuna or sardines in brine

    1 Baked potato

    1 Chopped tomato

    1 Cup cooked mixed vegetables


  • Omelette

    2 egg omelette with chopped tomato and chives

    served with 2 slices of toasted rye bread
